Zucchini Noodle Stir Fry

Health Benefits of ZucchiniI love zucchini! It’s one of my favorite summer veggies. It’s great to be able to grow your own, but it’s also great when friends and family have too much and generously share! Beyond being a vegetable, there are many health benefits of zucchini you may not be aware of, and as you know I am a big fan of foods that help your health!

Health Benefits Of Zucchini

Zucchini is a versatile veggie, and is full of health benefits. It’s an excellent source of vitamin C. It also has anti-inflammatory pectin fiber, which helps prevent heart disease, diabetes, and leaky gut. Additionally,  It has a high water content which makes it easily digestible, but is also full of fiber. And it can help with weight loss!

The health benefits of zucchini make it a powerhouse in your diet you should not miss. And during the summer take advantage of all the great zucchini you can when it is fresh from your yard or the grocery store.

Preparations

There are so many preparations to choose from for zucchini. I did a mini food-prep day yesterday of about 10 large zucchini. Some I shredded, some I “riced” in the food processor. Some I sliced on a mandolin to resemble lasagna noodles. I also sliced some into 1/8 inch thick rounds, seasoned and grilled for dinner yesterday. Delicious!! I also made my son some zucchini “tots” which he gobbled right up! It’s great when kids WANT to eat their vegetables!

This is a delicious, healthy way to serve up some of the zucchini that is growing like crazy in your garden right now! If you don’t have a veggie spiralizer, you could use the julienne blade of a mandolin.

Zucchini Stir-Fry

Quick, simple and delicious way to get the health benefits of zucchini into your diet!

This recipe is for one serving. Feel free to double or triple if needed.

Ingredients:
3 oz chicken breast, sliced
3 cups zucchini noodles
1 Tbsp coconut oil, divided
1/8 tsp garlic powder
1/4 tsp Chinese Five Spice
1 Tbsp chopped onion
1/4 tsp cracked black pepper
1 tsp local honey
1TBSP liquid aminos
Sautée chicken in 2 tsp coconut oil
Remove from pan.
Add remaining coconut oil and zucchini noodles. Add onion & dry seasonings. Sautee until noodles are soft and slightly browned. Add honey & liquid aminos . Stir to coat. Add chicken back in and sautee till heated through.
