Dairy Free Green Pea and Avocado Mint Dip

You love your healthy chips and veggie platters, but why are all the dips and spreads so full of inflammatory foods?  Most dips contain lots of dairy and preservatives that can really ruin your gut lining.

Try this fantastic recipe for a dip with plant pea protein, great avocado fats, and mint seasoning for a delicious twist!  It’s dairy and gluten free, quick to make, vegetarian and even low carb.

INGREDIENTS

Here’s what you need:

  • 1 ⅔ cups green peas, frozen
  • 1 clove garlic
  • 2 tbsp. lemon juice
  • ½ avocado
  • 2-3 sprigs fresh mint, leaves only

LET’S GET COOKING

Put the frozen peas in a bowl and cover them with boiling water so they can defrost.  After a few minutes, drain the water and place them in a blender or food processor.

Add the remaining ingredients, plus your preference of salt and pepper to taste.  Blend everything until the mixture is smooth.  Add 1 to 2 tablespoons of cold water if the dip is too thick.
