When you need a pick me up, most snacks are loaded with processed sugar, preservatives, and just plain unhealthy.  Try these quick and easy Energy Balls you can pop on the go and enjoy as a guilt-free treat!

As and added plus, these are gluten free, dairy free, low carb (so great for keto), vegan, and you can refrigerate them for a time so they last longer and and make a big batch in bulk.

VEGAN AND GLUTEN FREE ENERGY BALLS RECIPE

INGREDIENTS

  • 1 cup pitted dates
  • 3/4 cup almond meal
  • 1/2 cup desiccated coconut
  • 2 Tbsp chia seeds
  • 2 Tbsp melted coconut oil
  • 1 Tbsp natural peanut butter

LET’S GET COOKING

Place all of the ingredients in a high-speed blender or food processor and mix until everything is well combined and chopped to small pieces.

Using your hands, form 10 balls about the size of a walnut.  Place them in the fridge to chill for at least 1 hour so that they become more solid.

Store in the fridge in an airtight container for up to 2 weeks.  Enjoy!
